Roast Leg of Lamb with Mint Sauce

  • 1 (4 lb.) leg of lamb
  • 3 tablespoons Crosse & Blackwell® Mint Sauce
  • 5 cloves garlic, minced
  • 1 tablespoon fresh rosemary leaves
  • 2 tablespoons Extra Virgin Olive Oil
  • Salt and pepper to taste


  • Step 1

    HEAT oven to 400°F. Place lamb on rack in roasting pan. Stir together mint sauce, garlic, rosemary and oil in small bowl. Rub mixture onto lamb and season with salt and pepper.

  • Step 2

    Simply add roasted red potatoes for a very special dinner.

  • Step 3

    ROAST lamb in middle of oven 1 1/2 hours, or until meat thermometer registers 160°F for medium. Transfer lamb to cutting board and let stand, covered loosely with foil, 10 minutes.

  • Step 4

    SLICE lamb thinly across grain and arrange on a platter. Season with salt & pepper. Top lamb with additional mint sauce.
